Spinach and Feta Puff Pastry
- 1 sheet of puff pastry
- 300 grams of fresh spinach
- 150 grams of feta cheese
- 1 garlic clove, chopped
- 1 egg (optional, for brushing the pastry)
- Salt and pepper to taste
Preparation: Preheat the oven to 200°C. Sauté the garlic with the spinach in a pan until tender. Remove excess liquid. Mix the spinach with the crumbled feta cheese and season with salt and pepper.
Roll out the puff pastry, place the filling in the center, and fold it into a pouch, sealing the edges. If desired, brush with beaten egg and bake for 25-30 minutes or until golden.
Serve hot and enjoy its crispy texture.
Pumpkin and Ginger Soup
- 1 kg of pumpkin
- 1 onion
- 1 piece of fresh ginger (about 2 cm)
- 750 ml vegetable broth
- 200 ml coconut milk
- Olive oil, salt, and pepper to taste
Preparation: Peel and cut the pumpkin, onion, and ginger into pieces. Sauté the onion with a little oil until translucent. Add the pumpkin and ginger and cook for a few minutes. Pour in the vegetable broth and cook until the pumpkin is tender.
Blend the mixture with an immersion blender until smooth. Add the coconut milk and blend again.
Adjust seasoning with salt and pepper, then serve hot with a drizzle of olive oil or pumpkin seeds.

Preparation: Preheat the oven to 180°C. Melt the butter with the honey, sugar, and cinnamon in a pan until it turns a light caramel color.
